I could eat Quinoa all day. I can’t believe I only started eating Quinoa 6 months ago. I had been missing out on it for too long!
If you haven’t tried Quinoa then go do it now. Please.
So, I love to mix Quinoa with anything. But one of my favorite Quinoa recipes is the Quinoa Salad with Fruits!
- Basically any other thing you want! I sometimes add corn, or capscium, or tomato, or whole wheat toast cut out into little pieces.
Cook the Quinoa. If you don’t know how to cook quinoa you can learn how to do so here or you can read my short explanation at the bottom of this recipe.
Tip: You shouldn’t need more than 1 cup of Quinoa for this recipe, but whenever I make Quinoa I try to make a loooooot so I can have some later in the day/week.
Cut fruits and veggies.
When adding onion, I always try to make it taste less intense, by cutting it up and letting it soak in warm water for at least 10 minutes.
When Quinoa is ready, add fruits and vegetables.
I am not really into salad dressings; i’m more of a PUT LEMON ON EVERYTHING kind of girl. So for me, this salad + lemon = perfection. Strawberries and mangoes with lemon are AMAZING! But I understand how some people might not like it. So just go with whatever dressing your heart desires.

How to Cook Quinoa:
Rinse 1 cup Quinoa in a fine-mesh strainer until water runs clear, drain and transfer to a medium pot. Add 2 cups water and salt and bring to a boil. Cover, reduce heat to medium low and simmer until water is absorbed, 15 minutes. Set aside off the heat for 5 minutes; uncover and fluff with a fork.
