For months, I was hearing more and more about mugcakes. My friend kelly (@activkel on instagram) even started talking about making her own mugcake recipe book (which is available for purchase on her webpage, btw). I kept thinking “what are mugcakes and why haven’t I tried them yet?”
So my insta bestie @juliemariefit posted a mugcake recipe on her instagram and I tried it. Let me tell you, mugcakes are heaven. There’s no other way to describe it! Here’s my friend Julie’s recipes (with a small tweak I made):
- 1 ripe banana – mashed
- 1 egg
- 2 tablespoons oats
- 1 teaspoon cinnamon
- 2 teaspoons chia seeds
- 1/2 teaspoon vanilla essence
- Mix ingredients in a mug or bowl
- Microwave for 3 minutes
- Remove from microwave and flip mug over onto a plate.
- Add toppings!
I love adding any kind of nut butter on top, as well as some fresh or frozen fruits, maple syrup, coconut flakes, cinnamon, etc.
Come up with your own toppings and enjoy!
